Air Fryer Breakfast Cookie

10-minutes, vegan, gluten free and high protein, this air fryer breakfast cookie is the perfect balanced breakfast for busy mornings!

Ingredients 

  • cup oats quick, minute or rolled all work
  • ½ of one medium banana mashed
  • 1 teaspoon baking powder
  • ½ scoop protein powder optional see notes below
  • 1 tablespoon melted coconut oil see notes below for substitution
  • 1 tablespoon milk if needed
  • sprinkle of cinnamon
  • small handful of chocolate chips or blueberries

Instructions

  • Preheat air fryer to 360°F (or preheat oven to 350°F).
  • Mix all ingredients except for the chocolate chips/blueberries in a small bowl. *if you find your mixture is too dry, add milk- otherwise it should be fine to leave it out!
  • Form batter into a round ball and press into a cookie shape in the basket of the prepared air fryer (spray lightly with cooking spray) or on a prepared cookie sheet.
  • Add chocolate chips or blueberries on top and gently press them into the top of the cookie.
  • Air fry for about 8-10 minutes (or bake in the oven for 15 minutes)
  • Enjoy!

Notes

*If you do not wish to use protein powder, feel free to completely omit it from the recipe. You may just need to add an extra tablespoon of oats!
*to substitute the coconut oil, feel free to use the same amount of any natural peanut butter as long as it is runny (you want it to still have some natural oils and not the dry part at the bottom of the container!)
