Easy Homemade Garden Salsa

Ingredients 

  • 4 medium hot house tomatoes quartered
  • ¼ of a large white onion quartered
  • 1 small jalapeno seeded (if using a large jalapeno, use half and test before adding more)
  • 1 large clove of garlic pressed
  • 1 medium lime just the juice
  • ½ cup cilantro loosely chopped
  • salt to taste

Instructions

  • In a food processor combine tomatoes and onion and pulse quickly about 3 times (this helps make more room to add the rest of the ingredients).
  • Add in remaining ingredients (jalapeno, garlic, lime, cilantro, salt) and pulse processor until mixture if fully combined (the longer you process it the smoother it will be, so if you like it chunkier pulse less!)
  • Transfer to a bowl and serve!

Notes

*As you can see many of the quantities of ingredients are just by halves, quarters etc. they aren't proper cup measurements. That's because for this salsa I like to just throw everything into the food processor, not measure exact amounts and just adjust to my taste preferences. I'd recommend following the recipe as is but don't fret too much if you don't have that EXACT amount of ingredients, or aren't sure if you onion is too big. You can always adjust the taste to meet you needs!
  • to make it spicier: add more jalapeno (less spicy- add less jalapeno)
  • to make it saltier: add more salt (less spicy- less salt)
  • if it needs a bit more of an OOMF: add more lime juice
  • if it is too sharp: it probably means the ratio of onion to tomato is off, just add more tomatoes!
