Edamame Guacamole (High Protein)

High in protein, healthy fats, and easy to make, my favourite edamame guacamole is going to be your new go-to dip. It goes on EVERYTHING!

Ingredients 

  • 3 medium ripe avocados
  • Juice of 1 lime about 2 tbsp
  • 1 cup frozen shelled edamame thawed
  • ½ cup tomato diced
  • ¼ cup red onion diced
  • 1 large jalapeno about 3 tbsp, seeded and finely diced
  • ¼ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • ¼ cup cilantro finely chopped
  • Salt and black pepper- to taste

Instructions

  • Cut the avocados in half. Remove the pit. Scrape the inside of the avocado with a knife and scoop out the flesh with a spoon.
  • In a high powered blender or food processor add half of the avocado along with the lime juice and edamame beans. Pulse until a paste forms (about 1-2 minutes)- you just want to break down the edamame beans so you don’t have large chunks!
  • In a mortar and pestle (or in a bowl with a fork) mash the remaining avocado. Add the edamame/avocado paste and mix. Add in the remaining ingredients and adjust spices to taste.
  • Serve immediately with your favourite chips, crackers or veggies!

Notes

If you wish to store this I recommend storing it in an airtight container OR a bowl and covering it tightly with plastic wrap. To avoid oxidation (browning of the avocado) try to press the plastic wrap against the surface of the dip. Use a spoon to flatten the surface of the dip and remove any air bubbles!
