Pear Oatmeal Bake

The perfect pear baked oatmeal, a cinnamon oatmeal base with fresh pears, topped with an easy oat crumble. This easy pear baked oatmeal is naturally sweetened, filled with fibre and makes the ultimate cozy breakfast!

Ingredients 

For the oatmeal base

  • 2 medium eggs
  • ¼ cup coconut oil melted
  • ¼ cup honey
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup pears diced (about 2 medium pears)
  • 2 cups oats quick, minute or rolled all work
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • additional sliced pears for topping (about 1 pear)

Oat crumble (optional)

  • ½ cup oats quick, minute or rolled all work
  • ¼ cup brown sugar
  • ½ teaspoon ground cinnamon
  • 2 tablespoon coconut oil melted
  • cup walnuts chopped

Cream cheese glaze (optional)

  • ¼ cup light cream cheese softened
  • 1 tablespoon icing sugar (powdered sugar)
  • 1 tablespoon milk

Instructions

  • Preheat oven to 350 degrees Fahrenheit and line a 9x9 inch square baking dish with parchment paper.
  • To a large mixing bowl whisk together eggs, melted coconut oil, honey, milk and vanilla extract.
  • To a separate mixing bowl mix together oats, baking powder, salt and cinnamon. Slowly add the dry ingredients to the wet ingredients and stir together until fully combined. Gently fold in the diced pears.
  • Pour the mixture into the prepared pan and smooth top.
  • If you are using the oat crumble- combine the crumble ingredients in a small bowl and sprinkle over the top of the oat base. Top with sliced pears and bake for about 35-40 minutes or until the edges are golden brown. Allow to cool and slice into 6 equal slices.
  • To make the cream cheese glaze whisk together all glaze ingredients and drizzle over the top of the baked oats.
