Ingredients
For the oatmeal base
2 medium eggs
¼cupcoconut oilmelted
¼cuphoney
1cupmilk
1teaspoonvanilla extract
1cuppearsdiced (about 2 medium pears)
2cupsoatsquick, minute or rolled all work
1teaspoonbaking powder
¼teaspoonsalt
1teaspoonground cinnamon
additional sliced pears for topping(about 1 pear)
Oat crumble (optional)
½cupoatsquick, minute or rolled all work
¼cupbrown sugar
½teaspoonground cinnamon
2tablespooncoconut oilmelted
⅓cupwalnutschopped
Cream cheese glaze (optional)
¼cuplight cream cheesesoftened
1tablespoonicing sugar (powdered sugar)
1tablespoonmilk
Instructions
Preheat oven to 350 degrees Fahrenheit and line a 9x9 inch square baking dish with parchment paper.
To a large mixing bowl whisk together eggs, melted coconut oil, honey, milk and vanilla extract.
To a separate mixing bowl mix together oats, baking powder, salt and cinnamon. Slowly add the dry ingredients to the wet ingredients and stir together until fully combined. Gently fold in the diced pears.
Pour the mixture into the prepared pan and smooth top.
If you are using the oat crumble- combine the crumble ingredients in a small bowl and sprinkle over the top of the oat base. Top with sliced pears and bake for about 35-40 minutes or until the edges are golden brown. Allow to cool and slice into 6 equal slices.
To make the cream cheese glaze whisk together all glaze ingredients and drizzle over the top of the baked oats.
