Microwave Cinnamon Rolls

Ingredients 

Dough

  • ½ cup oat flour + more for rolling
  • 1 tablespoon milk of choice
  • ½ tsp baking powder
  • ½ teaspoon cinnamon
  • ½ of 1 medium banana mashed

Filling

  • 1 tablespoon coconut oil melted
  • 1 + ½ tsp cane sugar
  • 1 teaspoon cinnamon

Instructions

  • In a medium sized bowl, combine dough ingredients and mix until a dough begins to form
  • Sprinkle oat flour on a clean surface, and roll dough into a rectangle (dough will be about ¼" thick)
  • In a separate small bowl, combine filling ingredients and mix well
  • Spread the filling evenly over the dough
  • Slice dough into 4 even rectangles and roll (starting from the wider edge). Slice each roll into equal halves to create 8 mini cinnamon rolls.
  • Place cinnamon rolls into a microwave safe dish and microwave for about 2 minutes and 15 seconds.
  • Coat with yogurt or icing of choice!

Notes

*Note that cook times vary depending on microwave power, watch closely and remove from microwave when rolls look cooked!
*Dish will be hot when you remove from microwave, use oven mitts!
