Vegan Mango Soft Serve

Ingredients 

  • ½ cup coconut milk
  • 1 medium lime just the juice
  • 1 cup frozen mango chunks
  • 1 cup ice see notes

Instructions

  • Place two small bowls in the freezer (this helps to avoid your mango soft serve melting after you pour it into the bowl).
  • Combine all ingredients in a food processor or high powered blender (add the liquid FIRST). Secure the lid and begin processing. Stop the machine whenever the fruit gets caught or stops blending. Use a spatula to mix the fruit, scraping the sides. This will happen often at the beginning.
  • Continue processing for about 5-6 minutes or until smooth.
  • Serve immediately.

Notes

*I like using ice to help create more bulk, without adding heaviness. However depending on your blender/ food processor the ice may create a less smooth texture as it's hard to break down! For the creamiest mango soft serve, substitute the ice with one additional cup of frozen mango or try adding one cup of another frozen fruit for a nice fruit blend!
