Loaded Hummus

Tired of boring hummus? This loaded hummus is about to be your new favourite crowd pleasing appetizer. An easy lemon garlic hummus topped with fresh vegetables and herbs... what's not to love!

Ingredients 

  • 1 540 ml can of chickpeas (approx. 19 ounces or about ¾ cup of dried chickpeas)
  • ¼ cup tahini
  • ¼ cup lemon juice (juice of about 1 large lemon)
  • 2 tablespoon olive oil
  • 2 tablespoon aquafaba (chickpea water OR water)
  • 3 cloves garlic pressed
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper optional
  • salt and black pepper to taste

Toppings

  • ¼ cup feta cheese crumbled
  • ¼ cup fresh parsley chopped
  • cup tomatoes diced
  • ½ cup cucumber diced
  • cup red bell pepper diced
  • 2 tablespoon black olives diced
  • 2 tablespoon red onion diced

Instructions

  • In a high powered blender or food processor add all base ingredients (see notes in full text above for blending tips). Blend on high until smooth (depending on the speed of your blender you may need to stir periodically).
  • Spread hummus onto a platter or pour into a container, top with your favourite toppings and serve with pita!
