No Bake Chocolate Truffles

Ready in less than 30 minutes, these no bake chocolate truffles are the simplest go-to dessert. High protein, gluten free and vegan, they're my top grab-and-go treat!

Ingredients 

  • 1 cup of pitted medjool dates about 12 dates
  • 1 cup of boiling water
  • 1 cup oat flour or almond flour
  • ½ cup creamy peanut butter
  • 4 scoops chocolate collagen or protein powder can substitute with 4 tablespoon of cocoa powder and 1 teaspoon maple syrup
  • 1 cup melted chocolate
  • Topping: ¼ cup crushed candy canes or chopped walnuts

Instructions

  • In a medium bowl add your dates and boiling water and set aside for 5 minutes (this step helps soften the dates to make them easier to blend).
  • In a food processor or high powered blender, add oat flour, peanut butter, chocolate collagen, your soaked dates and about ⅓- ½ a cup of the date water (the water you soaked the dates in) and blend until smooth (you may need to stir periodically).
  • Roll the mixture into 12 equal sized balls and place in the freezer for 5 minutes (use this as an opportunity to melt your chocolate).
  • After 5 minutes roll the balls in your melted chocolate and sprinkle with crushed candy canes or chopped walnuts.
  • Freeze until chocolate hardens and then store in an airtight container in the fridge!
