Lemon Cheesecake Overnight Oats

Protein packed lemon overnight oats topped with a creamy cheesecake layer, it doesn't get better than this!

Ingredients 

Crust

  • 2 graham crackers crushed
  • 1 teaspoon milk of choice

Oats

  • ½ cup oats quick, minute or rolled all work
  • 1 tablespoon chia seeds
  • 2 tablespoon vanilla protein powder optional
  • ½ cup milk of choice
  • ½ teaspoon vanilla extract
  • ½ tablespoon lemon zest about half of one medium lemon

Cheesecake topping

  • ½ cup plain Greek yogurt
  • 1 teaspoon honey
  • 1 tablespoon light cream cheese optional
  • 1 tablespoon lemon juice about half of one medium lemon

Instructions

  • In 3 separate bowls, combine the ingredients for each of the three layers.
  • In a mason jar or container, press the crust mixture into the bottom of the jar.
  • Layer with oat mixture and top with the cheesecake topping. Cover and place in the fridge overnight. In the morning top with additional crushed graham cracker crumbs and lemon zest if desired.
