Ingredients
2540mLcans chickpeas,rinsed and drained
1.5cupsedamame beans
4Persian cucumbers,diced
3stalksof celery,diced
¼cupfresh dill,chopped
½cupItalian parsley,chopped
250gsmoked salmon
⅓cupfeta cheese,crumbled
2shallots,diced finely
For the dressing:
Juice of ½lemon,and more as needed
½teaspooncumin
¼teaspoonsalt
¼cupplain Greek yogurt
2tablespoonmayonnaise
1.5tablespoonoriginal Dijon
Optional to thin dressing:
1-2teaspoonwater(or additional lemon juice)
Instructions
To a large bowl, add chickpeas, edamame, cucumbers, celery, fresh dill, parsley, smoked salmon, feta cheese and shallots.
In a liquid measuring cup whisk together lemon juice, cumin, salt, greek yogurt, mayonnaise, and dijon. Once smooth, taste and adjust seasonings to desired preference: adding more lemon juice will result in a thinner and more vibrant dressing, whereas adding 1-2 teaspoon of water will result in a more mild dressing.
Pour the dressing over the salad.
Toss to combine!

Salad can stay fresh in the fridge for up to 3-4 days with the smoked salmon. MEAL PREP TIP: add the smoked salmon to the salad fresh.
