The grown-up version of Cinnamon Toast Crunch! This Easy Cinnamon Sugar Granola has big crunchy clusters, cozy cinnamon flavor, and is naturally sweetened with banana and honey.

Ingredients
1½cupsoats,any type of oats will work
¼cupnut butter of choicecashew, peanut or almond butter
¼cuphoney
½ to 1banana,mashed
½cupnuts or seeds of choice(crushed walnuts, sliced almonds, hemp seeds, flax seed etc.)
2 teaspooncinnamon
1 teaspoonvanilla extract
saltto taste
Optional (for more flavor):
1 tablespoonbrown sugar
1teaspooncinnamon
Instructions
Preheat oven to 300°F.
In a large bowl, combine the oats, nuts/seeds, nut butter, honey, cinnamon, mashed banana, vanilla extract, and salt.
Evenly spread and press the granola onto a prepared baking sheet in one large, even piece, about ¼ inch thick. Pressing it firmly into a single slab (rather than scattering loosely) is what creates the big, chunky clusters.
If using: combine the optional brown sugar and cinnamon in a small bowl, and sprinkle half of the mixture over the top of the granola before baking.
Bake for 30-35 minutes, or until the edges start to brown.
Remove from the oven and let cool completely, undisturbed, for at least 1 hour to allow the granola to harden.
Once fully cooled, break into pieces (bigger chunks are best), toss with the remaining cinnamon sugar mixture, and store.
