Ingredients
4cupssugar snap peas,thinly sliced at a diagonal
½cupfresh mint leaves,finely chopped
½cupcurly parsley,finely chopped
¼cupfeta cheese,crumbled
¼cupunsalted roasted pistachios,chopped
2shallots,diced (about ⅓ cup)
2tablespoonlemon juice
2tablespoonolive oil
1teaspoonsmooth dijon mustard
½teaspoonsalt
¼teaspoonblack pepper
1teaspoonhoney
Instructions
In a large bowl, combine sugar snap peas, mint and parsley. Top with feta, pistachios and shallots.
In a glass bowl or liquid measuring cup whisk together lemon juice, olive oil, dijon mustard, salt, black pepper and honey.
Pour the dressing over the salad and toss to combine.
