This Pear and Fennel Salad is a bright, crunchy, high-fiber meal prep salad with beans, fresh herbs, and a simple lemon dijon dressing.

Ingredients
2bosc pears,diced
1540 ml canwhite navy beans,rinsed and drained
2cupsedamame beans
1bunchgreen onions,sliced thinly
1bagcoleslaw mix
1cupfennel,chopped thinly
½cupfresh dill,chopped
½red onion,thinly sliced
For the dressing combine:
4tablespoondijon mustard
⅓cupapple cider vinegar
½cupolive oil
1teaspoongarlic powder
2tablespoonhoney
½lemon,just the juice
1teaspoonsalt
½teaspoonblack pepper
Instructions
In a large bowl combine pears, navy beans, edamame beans, green onions, coleslaw mix, fennel, fresh dill and red onion.
To make the dressing combine dijon mustard, apple cider vinegar, olive oil, garlic powder,honey, lemon juice and salt and black pepper in a bowl. Whisk well.
Drizzle the dressing over the salad and toss to combine.
