Ingredients
3peaches,thinly sliced
2cupscherry tomatoes,halved
1shallot,thinly sliced
¼cupolive oil
2tablespoonapple cider vinegar
2tablespoonlemon juice
2teaspoonhoney
½teaspoonsalt
⅓teaspoonblack pepper
2tablespoonbasil,chopped
1large ballburrata
¼cuppistachios,chopped
Instructions
Add the peaches, tomatoes and shallot to a bowl.
Whisk together the olive oil, apple cider vinegar, lemon juice, honey, salt, black pepper and basil. Pour over the peaches and tomatoes and allow to rest for 10 minutes to bring out the juices.
Arrange the burrata on a serving tray or in a shallow bowl. Use a slotted spoon to scoop the peaches and tomatoes over the burrata, leaving any excess juices behind.
Top with additional chopped basil and pistachios.
Notes
Arugula is a wonderful addition to this salad- I usually will add 2 large handfuls however i only recommend adding if you are planning on eating right away to avoid it going soggy!
