Ingredients
110 ozorecchiette or small pasta(1 ¼ cups dry)
2tablespoonbutter
2zucchinis,shredded (about 3 cups)
1leek,thinly sliced
1shallot,diced small
4garlic cloves,pressed
1teaspoonsalt
½teaspoonblack pepper
2cupscorn kernels
½cupvegetable broth(low sodium)
¾cupreserved pasta water
⅓cupparmesan cheese,shredded
¼teaspoonred pepper flakes
½cupfull fat Greek yogurt
1lemon(juice and zest)
fresh basil,for serving
Instructions
Cook the pasta according to package instructions. Reserve ¾ cup of pasta water before draining.
To a large pan over medium heat, add the butter. Once melted, add the shredded zucchini, leeks, shallot and garlic. Cook for 8-10 minutes, stirring occasionally, until the zucchini has cooked down by about half.
Add the salt and black pepper and stir to combine. Cook for another 2 minutes, then stir in the corn.
Add the vegetable broth and reserved pasta water to the pan. Stir and bring to a simmer for about 5 minutes, until the liquid starts to reduce.
Stir in the parmesan and red pepper flakes.
Remove the pan from the heat and stir in the Greek yogurt. It's important to do this off the heat so the yogurt doesn't separate.
Stir in the lemon juice and zest, then finish with additional parmesan and fresh basil before serving.
Notes
For added protein, sub in a protein pasta (I like Catelli Protein+) or stir in cooked Italian sausage crumbles.
