Ingredients
1egg
2slicesof bread
½an avocado
½cupcottage cheese
Optional for additional flavour:
⅛teaspoonpaprika
⅛teaspoonsalt
⅛teaspoonblack pepper
1teaspoondijon mustard
1tablespoonsliced green onion
Everything but the bagel seasoning
1tablespoonhemp seedsoptional
Instructions
Hard boil your egg: Place the egg in a medium pot and cover with cold water. Bring the water to a boil. Once the water is boiling, cover the pot and remove from the heat. Let the eggs cook in the warm water (covered) for 9-12 minutes. Immediately place the egg in a bowl of ice water to stop the cooking process. Once cool, gently crack the shell and peel the shell away from the inner egg.
Toast your bread.
To make your cottage cheese avocado mix- in a medium bowl, add avocado, cottage cheese, and your hard boiled egg. Use a fork to gently mash the egg and avocado until smooth.
Season with paprika, salt, black pepper, dijon mustard and sliced green onion if desired. Mix well.
Top one slice of bread with ½ of the cottage cheese blend. Repeat with the second slice of bread. Sprinkle it with everything but the bagel seasoning and hemp seeds, enjoy!
