Avocado Cottage Cheese Toast

Avocado Cottage Cheese Toast is a high protein spin on a classic. Enjoy for a balanced breakfast or lunch with 25g of protein.

Ingredients 

  • 1 egg
  • 2 slices of bread
  • ½ an avocado
  • ½ cup cottage cheese

Optional for additional flavour:

  • teaspoon paprika
  • teaspoon salt
  • teaspoon black pepper
  • 1 teaspoon dijon mustard
  • 1 tablespoon sliced green onion
  • Everything but the bagel seasoning
  • 1 tablespoon hemp seeds optional

Instructions

  • Hard boil your egg: Place the egg in a medium pot and cover with cold water. Bring the water to a boil. Once the water is boiling, cover the pot and remove from the heat. Let the eggs cook in the warm water (covered) for 9-12 minutes. Immediately place the egg in a bowl of ice water to stop the cooking process. Once cool, gently crack the shell and peel the shell away from the inner egg.
  • Toast your bread.
  • To make your cottage cheese avocado mix- in a medium bowl, add avocado, cottage cheese, and your hard boiled egg. Use a fork to gently mash the egg and avocado until smooth.
  • Season with paprika, salt, black pepper, dijon mustard and sliced green onion if desired. Mix well.
  • Top one slice of bread with ½ of the cottage cheese blend. Repeat with the second slice of bread. Sprinkle it with everything but the bagel seasoning and hemp seeds, enjoy!
