Avocado toast is the healthy breakfast we all know and love, but I'm excited to share a Nourished spin on this classic. The new star: cottage cheese.
I've you're new around here, I've been on a major cottage cheese kick because it's high in protein and has a creamy, neutral taste. It goes with pretty much anything! I love cottage cheese dip, toasts and even cottage cheese cookie dough.
That's why I made this avocado cottage cheese toast. Avocado toast on its own is delicious, but it's definitely lacking in protein. I always recommend a breakfast with at least 15-20g of protein, so cottage cheese is the perfect addition. Since it has a light, creamy flavour, it compliments the avocado so well and transforms the toast into a filling, balanced meal.
Why This Recipe Is Dietitian Approved
- High protein breakfast. Avocado cottage cheese toast is packed with 31g of protein from the egg, cottage cheese, hemp seeds and whole grain bread. It's a great vegetarian option too if you're not into the breakfast meats.
- Quick to prepare. If you prep the hard boiled eggs ahead of time, this breakfast only takes 5 minutes to make. Perfect for mornings when you're short on time but still want a quick sit-down meal.
- Energize your morning. Not only is this toast loaded with protein, it also contains healthy fats and fibre from the bread and avocado. Together, these nutrients work to provide long-lasting energy so you can make it through to lunchtime.
Ingredients
Egg. These are one of the most nutrient-dense foods you can add to your breakfast, with healthy fats, protein, choline and vitamin D. I like looking for free-range or omega-3 fortified eggs to ensure I am getting the highest quality eggs.
Cottage cheese. Any fat percentage will work great in this recipe. I personally like using 2%.
Avocado. An amazing source of heart-healthy fats and added fiber. When purchasing avocados, I recommend looking for avocados that are just beginning to soften. When gently pressing on the skin it should slightly give, however it should not yet be mushy (this is a sign the avocado is overripe).
Bread. Any bread of choice will work. I like opting for sourdough or a whole grain option for the most fibre and protein.
Spices. I used paprika, salt, black pepper and everything bagel seasoning to add extra flavour.
Dijon mustard. For a bit of tang. I like using old fashioned, grainy dijon mustard.
Green onion. This adds some freshness and a pop of colour, because we eat with our eyes too!

Instructions
Hard boil your egg. Place the egg in a medium pot and cover with cold water. Bring the water to a boil. Once the water is boiling, cover the pot and remove from the heat. Let the eggs cook in the warm water (covered) for 9-12 minutes. Immediately place the egg in a bowl of ice water to stop the cooking process. Once cool, gently crack the shell and peel the shell away from the inner egg.
Toast your bread.
To make your cottage cheese avocado mix- in a medium bowl, add avocado, cottage cheese, and your hard boiled egg.
Use a fork to gently mash the egg and avocado until smooth. Season with paprika, salt, black pepper, dijon mustard and sliced green onion if desired. Mix well.
Top one slice of bread with ½ of the cottage cheese blend. Repeat with the second slice of bread. Sprinkle it with everything but the bagel seasoning and hemp seeds, enjoy!
Substitutions and Variations
To make gluten-free: Use a gluten-free bread of choice. I love Queen St. Bakery.
To make dairy-free: Unfortunately I have not found a dairy-free cottage cheese substitute yet.
To make nut-free: This recipe is naturally nut-free.
This is a great base recipe to customize with any flavor you like! Some other options include:
- Spicy: add 1 teaspoon of sriracha into the mix and top with red pepper flakes
- Greek: add 1 tablespoon of feta cheese into the mix and top with cherry tomatoes
- Dill: add 1 tablespoon of fresh dill into the mix. You can also add some chopped dill pickles. If you enjoy this variation, you'll love my pickle lover egg salad!

Storage
I don’t recommend making this cottage cheese blend ahead of time, as the avocado will brown in the fridge. If you are looking to meal prep this I recommend preparing your hard boiled eggs ahead of time and storing them in the fridge until needed.
Top Tip
To make this even easier in the mornings, I highly recommend preparing a batch of hard boiled eggs at the beginning of the week and storing them in the fridge until needed. This will significantly reduce the prep and cook time of this recipe. Plus, hard boiled eggs are great to keep on hand for a balanced snack.
To store hard boiled eggs, keep the shell on and place them in a bowl (or back into the carton) in the fridge for up to 7 days.
Frequently Asked Questions
No! I personally love adding an egg to my avocado toast for additional protein. However, this avocado cottage cheese toast will still taste great without the egg. I recommend sprinkling with some hemp hearts or hemp seeds for additional nutrition if you decide to skip the egg.
This toast is a great option for a balanced meal as it contains fibre, protein and healthy fats. I usually have 1-2 slices for a meal and pair with fruit or berries for more colour and micronutrients.
I love blended cottage cheese, but it will make the mixture runny. You can try it, just be prepared for a messier meal!
