This high protein Chicken Salad with Grapes is the perfect mix of sweet, savory, and creamy. Light, flavorful, and an easy lunch you’ll want on repeat.
Shred the chicken using a stand mixer, two forks or a hand mixer (details below).
To a large mixing bowl add shredded chicken, greek yogurt, mayonnaise, lemon juice and dijon mustard. Stir to combine.
To the bowl add diced celery, red grapes, walnuts, green onions, and parsley. Mix well. Season with salt and black pepper to taste.
Serve with crackers, in a sandwich or in a wrap.
Notes
To easily shred your chicken once cooked, add the chicken breasts to the bowl of astand mixer, use the paddle attachment and turn your mixer to the 'medium' setting. This is my best tip for quickly shredding chicken, but you can always pull it together with two forks if you don't have a stand mixer.
