These Cottage Cheese Eggs are a creamy, high protein twist on classic scrambled eggs that come together in under 10 minutes with just a few simple ingredients.

Ingredients
4eggs
½cup2% cottage cheese
pinchsea salt
black pepper
olive oil
1-2tablespoonshredded cheddar cheese(optional)
freshly chopped chives
Instructions
In a medium bowl, whisk the eggs, cottage cheese, salt and black pepper, to taste with a fork.
Heat a medium skillet over medium-low heat and add oil. When warm, pour the eggs in.
Using a rubber spatula, scrape sections of eggs to the center of the pan as the bottom starts to set, creating soft folds for about 1 ½ to 2 minutes total until just set. Just before serving, add the cheese in and gently fold in until melted.
Notes
Note: for added nutrients feel free to mix in chopped or diced vegetables of choice! I love adding a handful of spinach
