    Cottage Cheese Eggs

    These Cottage Cheese Eggs are a creamy, high protein twist on classic scrambled eggs that come together in under 10 minutes with just a few simple ingredients.

    If you've followed me on Instagram for a while, you know that cottage cheese + eggs is one of my all-time favourite hacks for boosting protein in any egg-based recipe. Whether it's in my Savory Breakfast Muffins, Meal Prep Breakfast Bowls, or even a lunch option like my Cottage Cheese Egg Salad, this combination is dreamy. So I thought it was time to go back to basics and create the perfect (and possibly the easiest) way to use this combo: classic scrambled eggs.

    If you're looking for a simple way to boost the protein in your breakfast, these cottage cheese eggs are a great place to start. Mixing cottage cheese into scrambled eggs creates a softer, creamier texture while adding extra protein to help keep you satisfied!

    Why This Recipe Is Dietitian Approved

    1. High protein breakfast option. Eggs and cottage cheese combine to create a satisfying breakfast with plenty of protein to help keep you full.
    2. Ready in under 10 minutes. This recipe comes together quickly, making it perfect for busy mornings when you want something nourishing without a lot of effort.
    3. Minimal ingredients. With just a handful of simple ingredients, this breakfast is easy to make with items you likely already have in your kitchen.

    Cottage Cheese Eggs Recipe

    Ingredients

    Ingredients for cottage cheese eggs including eggs, cottage cheese, shredded cheddar cheese, chives, olive oil, salt and pepper.

    Eggs. We use whole eggs for this recipe!

    Cottage cheese. I recommend 2% cottage cheese for the perfect mix between creaminess while still offering a lower fat option!

    Salt and black pepper.

    Olive oil. For cooking! If you prefer to use a different cooking oil, any neutral oil will work 

    Cheese. Cheddar cheese is perfect for added cheesy flavour

    Chives. Optional but i love adding in fresh chives for a touch of freshness and flavour.

    Instructions

    1. In a medium bowl, whisk the eggs, cottage cheese, salt and black pepper, to taste with a fork.

    1. Heat a medium skillet over medium-low heat and add oil. When warm, pour the eggs in.

    1. Using a rubber spatula, scrape sections of eggs to the center of the pan as the bottom starts to set, creating soft folds. Just before serving, add the cheese in and gently fold in until melted. 
    2. Remove from the heat, and sprinkle with chives for serving. 

    Substitutions and Variations

    To make gluten-free: This recipe is naturally gluten free!

    To make vegan: Unfortunately I do not yet have a dairy free cottage cheese option!

    To make nut-free: This recipe is naturally nut free!

    For added nutrition some great options include mixing in a variety of ingredients to boost micronutrients or add protein or carbohydrates!

    Veggies: Add any diced or chopped vegetables of choice (spinach, broccoli, etc) please note adding zucchini/ cherry tomatoes may result in wetter eggs due to the leaking moisture from the veggies 

    Protein: Add in some cooked ham, sausage or even shredded chicken!

    I recommend eating these cottage cheese eggs fresh for best results! If you have leftovers you can store them in an airtight container in the fridge and microwave to reheat however fresh is best when working with cottage cheese!

    Top Tips for Success

    The key to good scrambled eggs is continually moving them around the pan using a rubber spatula, this creates light and fluffy eggs!

    Do cottage cheese eggs taste different?

    They taste similar to classic scrambled eggs but are slightly creamier and richer!

    Can I blend cottage cheese eggs?

    Yes. Some people prefer blending the eggs and cottage cheese together before cooking for an extra smooth texture.

    • 1-2 tablespoon shredded cheddar cheese (optional)

    Note: for added nutrients feel free to mix in chopped or diced vegetables of choice! I love adding a handful of spinach
