You only need 3-ingredients to make these crunchy flax seed crackers. Naturally gluten-free, high in fiber and perfect for snacking these are the easiest homemade cracker you'll ever make.

2cupsground flax seed*see notes below*
½tbsp olive oil
⅔ cupwater
Optional For Flavour
1 teaspoonsalt
½tsp onion powder
½teaspoongarlic powder
1tablespoonfresh rosemaryfinely chopped
flakey sea saltfor topping
Instructions
Preheat the oven to 350℉ and prepare a 16x22" sheet pan.
In a medium mixing bowl, mix together ground flax seed, olive oil and water. You may need to use your hands to ensure the dough is fully combined.
Add seasonings of choice such as salt, onion powder, garlic powder and fresh rosemary. Stir to combine.
Roll the dough between 2 sheets of parchment paper until it is about 3mm thick. You may need to remove the top sheet of parchment paper, slice off any uneven edges and re-place the extra pieces in areas that are more sparse before re-rolling to ensure you have an even rectangular shape.
Use a pizza cutter to slice the dough into squares. I typically do rows of 10x10 to get approximately 100 crackers. Carefully transfer the parchment paper to the sheet pan.
Bake at 350℉ for about 25- 30 minutes (or until golden brown), turning the pan around ½ way through cooking.
Allow to cool before cutting fully and storing.

Please note this recipe can easily be halved to make approximately 50 crackers! SERVING SIZE: The nutrition facts are per serving (about 10 crackers) including the optional flavour-enhancers) ie. salt, spices).GROUND FLAX SEED TIPS: I used Manitoba Milling Company's Ground Flax Powder- this is essentially just ground flax seed but it is ground VERY fine, into a smooth powder. I Find this works best for smooth crackers. Please note if you use a coarser ground flax seed you can pulse it in the blender to create a powder or you can leave it as is, the cracker texture just won't be quite as smooth. BAKING TIME: The baking time of your flax seed crackers will depend on the thickness of the dough once rolled. Thicker crackers will require additional time. *the crackers on the outer edges of the pan will likely bake quicker than the ones in the center, don't forget to rotate the baking sheet while baking. If you find some crackers are completely crispy while other require more time, remove the done ones and continue baking. *I have included an estimation of the nutrition information for this recipe below.
