    Looking for easy meal prep friendly recipes to make this week? This is a full plan of all the meal prep recipes I made this week as a dietitian (in less than 2 hours)!

    Let's face it... this time of year is busy. So we're keeping it VERY simple this week. Not only did everything come together in less than 1.5 hours (including cleaning and packing everything up), but this also might be one of my favorite batches of recipes! From my favorite 5-ingredient chicken salad to protein bars that taste like a Reese's peanut butter cup I hope you enjoy this weeks meal prep recipes!

    My Meal Prep Formula

    As a dietitian I recognize that one of the biggest barriers to healthy eating is lack of time. Since no one wants to spend 8 hours in the kitchen, I like to keep my weekly preps as simple and realistic as possible.

    So this is how I do that! Every week I choose one of each:

    1. 1x grab and go breakfast.
    2. 1-2 x balanced snacks - take into account if you have a sweet tooth or more of a savory craving typically.
    3. 1x versatile protein for lunches. Instead of prepping entire meals, I like to make sure I at least have an easy protein available. As cooking proteins typically takes the longest, this makes creating meals so much easier. It also ensures I can create a wide-range of meals so I don't get bored!
    4. 1x fiber-filled carbohydrate source I don't do this every week but it definitely helps make creating quick meals easier!
    5. 3-4 fruits and vegetables. Look for seasonal options and sales! Having your fruits and veggies ready to grab makes it much. more likely you will eat them!

    Top Tip

    Meal prepping can be overwhelming! However my biggest tip is always to start small and think of what works for YOU. My meal prep plan may not be what you need - and that's ok!

    Look at your life and reflect on what meal/ time of day you typically struggle with the most when it comes to healthy eating, and start there! Try making ONE thing this week that makes that meal easier.

    This weeks 1.5 hour meal prep plan

    1. Start by cooking your chicken. The chicken bakes at the highest temperature so it makes the most sense to cook it first!
    2. While the chicken is cooking, prep your egg bites and have them ready to go. Once the chicken is cooked set it aside to allow it to cool. Decrease the oven temperature and bake the egg bites.
    3. While the egg bites are in the oven, make your peanut butter protein bars, finish the chicken salad, and prep your produce.
    4. Clean and pack everything up!

    Breakfast

    This is a brand new recipe and I think it might be my new favorite! The texture is perfectly light and fluffy and they are great to mix in any veggies you have on hand! Plus each bite contains 7g of protein.

    Snack

    Dinner Ideas

    I never prep anything for dinner but I DO like to have a plan! Taking time to pick 4-5 dinners and make a list of ingredients needed makes easy weeknight meals much smoother.

    Tip: write out the dinners and put them on the fridge so everyone in the household knows the plan!

    Storage Containers

    • 9 piece- glass container set with lids - these are great because it comes with small, medium and large options!
    • 5 piece- glass container set with lids- I find medium containers are the most versatile, so if you are looking for just the medium sized, these are a great option!
    • Vegetable tray: I get asked about the vegetable tray all the time and unfortunately it is old and it doesn't look like it's made anymore! However, I've rounded up a few similar options you can try out:
    • Covered veggie tray with dip holder

    • Covered veggie tray with handle (but no dip holder)
