    Chunky Monkey Frozen Yogurt Bark

    This Chunky Monkey Frozen Yogurt Bark is made with creamy Greek yogurt, peanut butter, banana, and chocolate for an easy, protein-packed freezer treat the whole family will love.

    This Chunky Monkey Frozen Yogurt Bark is one of my favorite freezer snacks on the blog. It starts with a creamy Greek yogurt and peanut butter base that's naturally sweetened with a touch of honey, then gets swirled with dark chocolate and topped with banana and graham crackers. It tastes like your favorite chocolate peanut butter ice cream, I'm not kidding it's so good I almost ate the entire batch in one go!

    I love creating healthier desserts as a RD, but like my Protein Peanut Butter Cups and my Sweet Potato Brownies, my requirement is that they still have to taste like dessert, and this one absolutely does. I tested this recipe quite a few times before landing on this version because I found Greek yogurt alone froze a little too hard. Mixing peanut butter into the yogurt creates a creamier texture that makes all the difference. If you're looking for an easy freezer-friendly sweet treat to keep on hand this summer, this is the recipe to make!

    1. Lower in added sugar. Made with naturally sweet banana and Greek yogurt, this frozen yogurt bark is a satisfying sweet treat with less added sugar than many frozen desserts.
    2. Easy to customize. Swap the toppings based on what you have on hand to create a different flavor combination every time!
    3. Perfect for the freezer. Keep a batch on hand for an easy, family-friendly treat whenever you're craving something sweet.

    Ingredients, Swaps, & Tips

    Ingredients for frozen yogurt bark including banana, graham crackers, chocolate chips, graham crackers, peanut butter, Greek yogurt, and honey.

    Yogurt: I use plain Greek yogurt and sweeten it with a little honey. You can also use vanilla Greek yogurt and omit the honey. Any fat percentage works, and while I haven't tested other types of yogurt, they may work as well.

    Peanut Butter: Natural peanut butter (just peanuts and salt) is my preference because it lets you control the sweetness, but any peanut butter will work.

    Honey: For a touch of natural sweetness (especially important if you are using plain yogurt)!

    Banana: Optional but highly recommended. Not only does it make your bark look fancy it also tastes amazing.

    Chocolate: I use dark chocolate or semi-sweet chocolate chips melted with a little coconut oil, but any chocolate will work. Swirl it into the yogurt with a toothpick for the prettiest finish.

    Graham Crackers: Completely optional, but they add a delicious crunch and extra texture to the bark.

    Instructions

    1. In a medium sized bowl, combine Greek yogurt, honey and peanut butter and mix thoroughly until combined.

    1. Transfer the yogurt mixture onto a lined baking sheet, using a spatula to spread and smooth it out until it reaches an even thickness.
    2. Melt your chocolate. Add dollops of the melted chocolate on top of the yogurt mixture and swirl it around using a toothpick.
    Crushed graham crackers, sliced banana and peanut butter drizzle added to the Greek yogurt and chocolate base.
    1. Top with bananas, graham cracker crumbs, peanuts and a peanut butter drizzle (optional)!

    1. Freeze for 3-4 hours or until firm (I typically leave it overnight).
    2. Once firm, break the bark into pieces and store in a container in the freezer.

    Substitutions

    Gluten Free

    The base of this frozen yogurt bark is naturally gluten-free. Simply use gluten-free graham crackers or omit them altogether.

    Vegan

    Use a thick dairy-free yogurt and swap the honey for maple syrup.

    Variations

    One of the best things about this frozen yogurt bark is how customizable it is. Mix and match your favorite toppings like chocolate chips, berries, walnuts, or jam.

    This frozen yogurt bark must be stored in the freezer. Once frozen, break it into pieces and store in an airtight freezer-safe container or zip-top bag for up to 3 months.

    Top Tips for Success

    Use a toothpick to swirl the chocolate into the yogurt. A larger utensil, like a fork, will disrupt the yogurt and mix the chocolate in rather than creating beautiful swirls.

    For a creamier frozen yogurt bark, use a higher-fat Greek yogurt, such as 5%, to help reduce iciness.

    Can I use regular yogurt instead of Greek yogurt?

    Greek yogurt works best because it's thicker and creates a creamier frozen yogurt bark. Regular yogurt contains more moisture, so the bark may turn out icier.

    • 1+ ¼ cup plain Greek yogurt any fat percentage will work
    • 1 tablespoon honey
    • ½ cup natural peanut butter
    • ⅓ cup dark chocolate melted
    • 1 medium banana sliced
    • ¼ cup crushed graham crackers
    • 2 tablespoon crushed peanuts

    *as it is frozen this bark MUST be kept in the freezer. As much as I wish I could bring it with me anywhere I go sadly it will melt so it's a treat best enjoyed at home.

      So what size baking sheet do you use? or what size do you spread the yogurt mixture to be?

      I haven’t made this yet, but I’m wondering if substituting Sunbutter, made from sunflower seeds, would work instead of peanut butter. Then you won’t have to worry about serving this delicious treat to anyone with nut or peanut allergies!
