These healthy chocolate brownie cookies have become one of my favourite treats to bake when I want something rich, chocolatey, and satisfying but still a little more nourishing. I love a classic cookie moment, but sometimes I want a dessert that feels lighter and uses ingredients that keep me feeling good.

These healthy chocolate brownie cookies follow that same idea. They use oat flour, almond flour, and coconut sugar to create a soft, chewy texture with a rich chocolate flavour that truly hits the spot. They also come together in one bowl and bake in under 10 minutes, which makes them perfect for weeknights, holidays, or any time a chocolate craving hits!

Healthy Chocolate Brownie Cookies Recipe
Ingredients

Flours. In this cookie recipe we are using oat and almond flour!
Cocoa powder. To make these chocolate cookies chocolate flavour we use cocoa powder- i recommend using a high quality cocoa powder for best results
Baking soda. For RISE, make sure your baking soda is not expired!
Salt. Adding a touch of salt helps bring out the flavour of these cookies
Butter. I did decide to use regular butter in these cookies because I truly think the flavour real butter creates is unmatched. If you are dairy free feel free to substitute a vegan butter alternative.
Coconut sugar. Used coconut sugar in these to reduce the processed sugar added to the cookies. If you only have brown sugar on hand you absolutely can use that instead.
Egg. We use one whole egg in this recipe to provide structure and leavening.
Vanilla extract. For flavour! Natural or artificial vanilla extract will both work
Milk. To provide a little moisture
Chocolate. I recommend using chips AND chunks! The chocolate chunks melt to creat little pools of melted chocolate!

Instructions
- Preheat the oven to 350F and line a large cookie tray with parchment paper.

- In a medium bowl, whisk together oat flour, almond flour, cocoa powder, baking soda and salt.
- In a separate large bowl, whisk together melted and cooled butter and coconut sugar. Once that is thoroughly combined, whisk in the egg, vanilla and milk.

- Slowly add the dry ingredients to the wet ingredients. Mixing to combine. Mix in chocolate chips and chocolate chunks.

- Scoop the dough into 12 balls (about 2 tablespoon per ball) and place onto the prepared baking sheet. Gently press down the tops of the cookies to flatten them. and bake for 9-11 minutes.

- Once baked, top with flakey sea salt before enjoying.
Substitutions and Variations
To make gluten-free: : this recipe can be made gluten free with a small substitution! The key sub is making sure you are using certified gluten free oat flour (like bobs red mill)!
To make dairy-free: I have not tested a vegan variation of this recipe!
To make nut-free: replace the butter and milk with a dairy free butter and milk substitute of choice (or use coconut oil) and ensure the chocolate is dairy free.

Top Tips for Success
Follow the order of ingredients listed! I have tested this recipe many times using many variations and recipe swaps and the best results were when the butter was mixed with the sugar BEFORE adding in all the wet ingredients.
