Honestly, I've made many baked oats recipes but these crumble topped baked oats remain my absolute favourite. They are packed with protein, flavour and have that delicious crumble topping any good bakery item has. Seriously these are a must try for your next weekend morning breakfast!

The ultimate hygge meal
If you spend a little time looking through my recipes you'll notice a common theme- I'm BIG on all things cozy. Sometimes I think I'm supposed to be living in Norway because I'm really into the whole Hygge concept. For those of you who may be thinking Nicole what the heck is Hygge? A quick google search states that "Hygge encompasses a feeling of cozy contentment and well-being through enjoying the simple things in life." That sounds exactly how I want to be feeling all year long. However, I'm stuck here in Canada for the time being, so these cozy cinnamon sugar baked oats are enough to give me allll the Hygge vibes.
I eat oatmeal almost every single day. These baked oats are a great option for when you still want the wholesome goodness of a filling bowl of oats, but you also want it to taste like cake. Because let's be honest who doesn't love cake for breakfast?? I promise these baked oats are SO good you'll want them for every meal. What Ingredients do I need for Cinnamon Sugar Baked Oats?
Oats- duh! you can't make baked oats without oats! I like to use minute oats but really any type of rolled or quick oats will work!
Banana- This recipe uses ½ of a medium banana for some sweetness without added sugar. I have never tested any other sweeter but if you try any let me know in the comments!
Milk- I use oat milk because that's what we have on hand in my house. However feel free to use whatever type of dairy/ non-dairy milk you choose.
Protein Powder- I like to add a little scoop of my favourite protein into all my oatmeal recipes. I find it is an easy way to help keep me full for a little longer during the day (and it adds a little extra sweetness). If you aren't a protein powder fan, feel free to leave this out!
Chia seeds- These help keep everything together while giving you some healthy fats to help complete your nourishing breakfast.

Cinnamon Sugar Oat Cake
Ingredients
Oat Base Ingredients
- ½ cup oats quick, minute or rolled
- ½ of 1 medium banana
- ½ cup milk of choice
- 1 teaspoon baking powder
- 1 scoop vanilla protein optional
- 1 tablespoon chia seeds
- ½ tsp vanilla extract
Crumble Ingredients
- 2 tablespoon oats quick, minute or rolled
- ½ tsp cinnamon
- ½ tbsp brown sugar
- ½ teaspoon melted coconut oil
Instructions
- Preheat oven to 375 degrees F.
- In a blender or food processor combine all oat base ingredients and blend until smooth.
- Grease a small oven safe dish.
- Pour oat base batter into the dish and set aside.
- In a small bowl, prepare the crumble topping by combining ingredients and stirring with a fork until a crumble forms.
- Evenly spread the crumble topping over the oat based batter.
- Bake for 25-30 minutes or until the top of the oats begins to brown.
- Carefully remove form oven, allow to cool and top with a little milk or cream!
