    This Tomato, Peach & Burrata Salad brings together the best summer flavors in a fresh, easy dish that comes together in just 15 minutes.

    I don't think I've ever made a salad that tastes more like summer than this Tomato, Peach & Burrata Salad. The combination of the tangy dressing paired with fresh basil, juicy peaches, ripe tomatoes, and creamy burrata is just SO good. You've got sweet, savory and tangy all coming together in one bite!

    The best part of this recipe is that the entire salad comes together so quickly with absolutely ZERO cooking required. Like my Roasted Red Pepper Feta Dip and my Mango Corn Salsa, it's the kind of recipe I love having in my back pocket for summer because it feels fancy enough to serve at a gathering but is ridiculously easy to throw together. As a dietitian, I also love that it's a simple way to get fiber, protein and healthy fats into one delicious side dish!

    Ingredients, Swaps, & Tips

    Ingredients for the easy summer salad including peaches, cherry tomatoes, burrata, shallots, fresh basil, apple cider vinegar, honey, salt and black pepper.

    Peaches: Look for ripe, fragrant peaches for the best natural sweetness. Nectarines work great too!

    Cherry tomatoes: Add a juicy, slightly tangy bite. Use a mix of colors for a beautiful presentation, or swap for heirloom tomatoes.

    Shallot: Adds a mild, slightly sweet onion flavor. Thinly slicing helps mellow the bite.

    Olive oil: I recommend using a higher-quality extra virgin olive oil for the best flavor.

    Apple cider vinegar: Adds the perfect tang to balance the sweetness of the peaches.

    Lemon juice: Brightens up the dressing. Freshly squeezed is best!

    Honey: Adds a touch of sweetness to round out the dressing.

    Salt & black pepper: Simple seasonings that bring all the flavors together.

    Burrata: The creamy, indulgent centerpiece of this salad! Look for a fresh ball in the deli or specialty cheese section.

    Basil: Adds a fresh, herby finish.

    Pistachios: Add the perfect crunch. Feel free to swap for your favorite nut or seeds for a nut-free option.

    Instructions

    1. Whisk together the olive oil, apple cider vinegar, lemon juice, honey, salt, black pepper and basil.

    1. Add the peaches, tomatoes and shallot to a bowl.
    2. Pour the dressing over the peaches and tomatoes and allow to rest for 10 minutes to bring out the juices.

    1. Arrange the burrata on a serving tray or in a shallow bowl. Use a slotted spoon to scoop the peaches and tomatoes over the burrata, leaving any excess juices behind.
    2. Top with additional chopped basil and pistachios.

    Substitutions

    Gluten Free

    This recipe is naturally gluten-free!

    Vegan

    Swap the honey for maple syrup and the burrata for your favorite dairy-free burrata or a drizzle of dairy-free ricotta.

    Dairy Free

    Swap the burrata for a dairy-free burrata or fresh dairy-free mozzarella alternative.

    Nut Free

    Omit the pistachios or swap them for toasted sunflower or pumpkin seeds.

    Variations

    Add greens: Arugula is a great addition to this salad! I usually add about 2 large handfuls, but only add it if you're planning to eat the salad right away so it doesn't get soggy.

    This tomato, peach and burrata salad is best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 1 day.

    Top Tips for Success

    Use a slotted spoon when serving! The peaches and tomatoes release juices as they rest, so using a slotted spoon to transfer them onto the burrata keeps the salad from becoming watery.

    Can I make this ahead of time?

    I recommend slicing the peaches, tomatoes and shallot and whisking the dressing ahead of time, but wait to assemble with the burrata until just before serving for the best texture.

    What can I serve this salad with?

    This salad pairs beautifully with grilled chicken or fish, or served alongside crusty bread as an appetizer. I love pairing it with my Hot Honey Chicken Thighs or BBQ Chicken Thighs!

    • 3 peaches, thinly sliced
    • 2 cups cherry tomatoes, halved
