    5-Minute Easy Chickpea Protein Cookie Dough

    Have you ever wanted to make cookies just so you could eat the dough? Well now you can. Introducing your new favourite chickpea protein cookie dough. Packed with fibre, whole grains, healthy fats and completely vegan. So feel free to eat the entire bowl.

    There's just something about raw cookie dough that's so good. Maybe it's how creamy it is? Or maybe it's the fact that you know you shouldn't be eating it that makes it so unresistable. To be honest I'm not sure. What I do know is that majority of the time cookie dough is better than the actual cookies and that's a fact. Unless of course your eating my olive oil chocolate chip cookies because those are TOO good.

    The problem is, raw cookie dough isn't always the safest (or healthiest) option when your craving a snack. That's where this chickpea protein cookie dough comes in. It's 100% vegan meaning it's 100% safe to consume raw. It's also made from a secret ingredient that helps boost the protein and fibre making it HEALTHY cookie dough. How exciting!

    One of my most vivid memories as a child is sneaking cookie dough from the bowl whenever my mom turned away. I was obsessed with cookie dough as a kid. Like sneaking under the table with an entire roll of Pillsbury cookie dough obsessed. It wasn't the healthiest addiction... but it was good. So safe to say I'm somewhat of a raw cookie dough expert. That's why I had to create an edible cookie dough recipe. But not just any old edible cookie dough. I wanted it to be a cookie dough that not only tasted good but was also healthy enough to be a balanced snack. Introducing my secret weapon to making that dream a reality: the chickpea.

    Why use Chickpea in Edible Cookie Dough?

    The chickpea is my secret ingredient to create a moist dough or batter in my higher protein recipes. See my chickpea blondies for more proof! However chickpeas do more than just creating the perfect base for this cookie dough. The chickpea is also a nutritional powerhouse, full of protein, fiber, folic acid and manganese. Making them the perfect addition to any balanced meal or snack. So I try to sneak them into my recipes whenever I can. Hence why these chickpea protein cookie dough balls make the perfect snack!

    One of the questions I get asked the most with this recipe is 'can you taste the chickpeas?'. The answer to that question is a big NO. I promise you will not be able to taste the chickpeas (unless you really hate chickpeas). This chickpea protein cookie dough tastes pretty close to the cookie dough I used to sneak as a kid if you ask me. Don't believe me? try it for yourself!

    What Ingredients do I need for this High Protein Cookie Dough?

    Nut Butter- Any nut butter works here! Peanut butter, cashew butter, almond butter! The choice is yours. (Note that cashew butter tastes the least nutty and will give the best cookie dough taste). SADLY I do not have a nut-free version (yet!).

    Maple Syrup- For some natural sweetness! I have only ever used maple syrup in these chickpea proteinc ookie dough balls but if you do try to substitute with honey or any other liquid sweeter let me know how it goes in the comments. You could also try a sugar-free version like this one!

    Chickpeas- The secret weapon! The true base of this cookie dough is the chickpea. If you are intolerant to chickpeas, white beans also work in an equal amount.

    Oat Flour- I love using oat flour for some added whole grains and fibre! It really helps make them the perfect snack for lasting energy. To make my oat flour I just blend an equal amount of oats in a high powered blender or food processor. You can also buy oat flour pre-made like this one. PS. almond flour also works in an equal ratio if you prefer!

    Protein Powder- This helps give this cookie dough a little protein boost. I like using my favourite protein (I love the vanilla flavour in these!). If you don't have protein powder on hand you can substitute this for collagen powder or additional oat flour!

    Mix-ins- This is where you get to be creative. Think of your absolute favourite cookie dough you ate as a child and recreate it with this chickpea protein cookie dough! I love the texture coconut adds but that's totally optional! PS. to keep it vegan try these dairy-free chocolate chips!

    Chickpea Protein Cookie Dough

    Ingredients

    • ½ cup nut butter cashew, peanut or almond all work*
    • ⅓ cup maple syrup
    • 1 can (540ml) chickpeas rinsed and drained
    • ½ teaspoon salt
    • 2 teaspoon vanilla
    • 1 + ½ cup oat flour see notes for substitution
    • 2 scoops protein powder (about ¼ cup) unflavoured or vanilla, see notes for substitutions
    • 1 tablespoon coconut oil melted

    Mix-Ins

    • ⅓ cup dried, unsweetened coconut flakes
    • ⅓ cup chocolate chips

    Instructions

    • In a food processor or high powered blender combine chickpeas, maple syrup, nut butter, salt, vanilla, coconut oil, oat flour and protein and blend until combined (you may need to stop and stir every now and then)
    • Scoop into a large bowl and mix in chocolate chips and coconut (or whatever you want to add!)
    • Using a cookie scoop or tablespoon scoop out cookie dough balls (or eat straight from the bowl)

    Notes

    *Store in fridge or freezer. If storing in the freezer, microwave for 15 seconds to help soften!
    *Flour- If you don't have oat flour on hand, feel free to use almond flour in an equal amount
    *Nut Butter- I like using cashew butter for a real cookie dough taste, however almond and peanut butter both work well
