    Turkey Apple Cheddar Quesadilla

    Turkey Apple Cheddar Quesadillas are a fun & healthy lunch that only takes 10 minutes. A twist on a classic that the whole family will love!

    I'm a big fan of quesadillas because they're so easy to make and super satisfying. Add all your favorite veggies, a protein, and toast it with some gooey cheese- what's not to love?

    I love a savory BBQ chicken quesadilla and a sweet PB&J quesadilla, but what about a sweet AND savory recipe? This turkey apple cheddar quesadilla is exactly that, and it's my newest obsession. We have protein and savory goodness from the turkey and cheddar, creaminess from some avocado, and a hint of sweetness from the apple. If you've never tried apple paired with cheddar before, I have a feeling you'll fall in love.

    This is such an easy 10 minute lunch recipe that will quickly become a part of your rotation! With 20g of protein and 12g of fibre, your body will love it too.

    Why This Recipe Is Dietitian Approved

    1. 10 minute lunch. No one feels like making a full meal in the middle of the day, so I always go for recipes that only take 10-15 minutes. Quesadillas fit the bill, yet still bring flavour and nutrition.
    2. Balanced nutrition. This quesadilla has protein, healthy fats and fibre, for a filling lunch to fuel the rest of your day.
    3. Perfect for the whole family. What kid doesn't love a quesadilla? And honestly, the same goes for parents and adults. I've loved quesadillas my whole life, and I love this elevated take on a classic.

    Ingredients

    Ingredients including tortilla, turkey, cheddar, apple, and avocado.

    Whole wheat tortilla. Any large tortillas will work great in this recipe, however I used whole wheat for extra fibre.

    Cheddar cheese. My favorite type of cheese to use in this quesadilla is a sharp cheddar because it pairs perfectly with the apple. I recommend shredding it yourself for the ultimate cheese pull.

    Turkey. Our protein of choice! I recommend choosing a nitrate/nitrite turkey breast such as Maple Leaf Naturals.

    Apple. There is no better combination than turkey, cheddar and apple! I recommend using honeycrisp apples for the perfect amount of subtle sweetness and crispiness in this quesadilla.

    Avocado. For healthy fats and added fiber.

    Instructions

    1. Spread a thin layer of oil on one side of the tortilla and gently slice a cut through the wrap from the bottom to the middle (to create a flap).

    1. Place the tortilla on a non-stick pan over medium heat. Arrange the toppings in each quarter of the tortilla, sprinkle the salt and pepper over the avocado. Once the cheese has melted, gently fold over the edges in three folds: starting at the bottom then moving to the side then finally finishing with a fold towards the bottom.

    1. Slice in half and serve with remaining apples!

    Substitutions and Variations

    To make gluten-free: use a gluten-free tortilla of choice.

    To make dairy-free: use a dairy-free cheese of choice.

    To make nut-free: this recipe is naturally nut-free.

    This quesadilla is best eaten fresh. To make this meal prep friendly, I recommend having all the ingredients prepped and ready to grab so you can easily assemble the quesadilla when you're ready to eat.

    Top Tips for Success

    I recommend placing the heavier ingredients (i.e. the turkey and apples) on the top of the quesadilla; this will make it easier to fold over the edges and ensure nothing falls out. This would mean the order from the bottom left moving clockwise would go: cheddar cheese, turkey, apples, avocado.

    Can I make this like a normal quesadilla? 

    Yes, you absolutely can! Just add all the toppings to one side of the tortilla and fold over.

      These are super quick and easy to make! Very customizable for whatever you have in the fridge. I assembled them ahead of time and put them in the toaster oven when I was ready for them!
